    When looking to retain the nutritional value of your produce, choose air drying over dehydration. What’s the difference?

    Dehydration: Like ovens, food dehydrators work by circulating warm air around the produce for an extended period of time, drawing moisture out of foods so they dry out.

    Air drying: Air drying relies on low heat and evaporation of the moisture.

    Many dried fruit producers are known to soak their fruits in sugar syrups and juice to intensify the flavours lost by the high heat of the dehydrating process. Additionally adding acids and dyes to replace the colour that is naturally lost are also common practice when fruits are dehydrated instead of air dried.
